Their use lies in the fact that more attacks still = more misses as well. Without them you would receive even more hits. Multiple attacks don't weaken the defense skills and attributes so much as make them more important. Including armor handling and critical resistance. (& resistance as well, btw!).

OK, let's assume that your evasion skills are good enough that you can duck 4 of 10 attacks that would otherwise hit you.

In a hypothetical 20 round fight with someone who only has one attack that's 8 blows that would have landed on you that you didn't take.

In a hypothetical 20 round fight with someone who has *two* attacks that's *16* blows that would have landed on you that you didn't have to take.

In the second case your defense skill worked twice as hard and did twice as much for you. They become more important when dealing with multiple attacks.

Mind you, the skills that help you shrug off damage (Armor handling, critical resistance) *also* become more important for some very obvious reasons. Sooner or later you do take damage and the ability to resist that damage can become important.
