If a building is set ablaze and the owner has insurance, they get paid. They kick over a little something back to the person who did it for them. It's basically insurance fraud for them, and arson for you.

As for airport security, it's not like they are walking around with a huge wad of cash. If you try it and actually succeed, then you'll notice why security has that much cash.
