What does experience you gain from busting someone or yourself out of jail do for you? Also, where does the amount of experience you get from each bust show after the bust?

It doesnt show, you have to do the maths yourself.

As for experience, all experience gained in any way goes toward your xp to level up. You can see where you are either on your home page where it states your xp and xp needed for next level as : xxx/xxxx

Or in the status bar below the links at the bottom left of the page.

Does that mean all experience... because there is also Work Experience... or is that separate?

All kind of experience, work, crimes, pvp fights, etc.

Ah,
there's experience, which is generated through a variety of things, which adds up to increase your character lvl.

Now,
"Work Experience" you asked about, functions more like a stat, it's raised via career point conversions for jobs, and by certain AL community college courses.
Work Experience's role is primarily to measure how high of a job rank you can attain.

For example,
if your work experience is lvl 4, than you can raise your career job-rank to lvl 4,
but say you were working towards another job promotion, to job-rank 5, than you'd have to raise your work experience higher as well.
